Chocolate Zucchini Bread

When my mom was my age, she copied down all of her grandmother’s recipes. So my little task for this year is to go through those recipes, bake or cook, photograph, and post them here. You’ll find the first recipe, Chocolate Zucchini Bread, below.

Chocolate Zucchini Bread
2 loaves
350F 45-50min
  • 3 eggs
  • 2 cup white sugar
  • 2 cup grated zucchini
  • 1 tsp cinnamon ( we added an additional tsp)
  • 1/4 tsp baking powder
  • 2 sq. unsweetened baking chocolate, melted
  • 1 cup oil
  • 1 tsp vanilla
  • 1 tsp salt
  • 1 tsp baking soda
  • 3 cup flour
Beat eggs, sugar, oil, and vanilla together. Add grated zucchini and melted chocolate. Mix in dry ingredients. Divide into two greased pans.
